Description

Ingredients

  • 3 lb BL SL Chicken thighs
  • 1 lb Broccoli
  • 1 lb mushroom sliced
  • 1 Sweet Potato
  • 4 Red Potatoes
  • 3 sm Green bell peppers
  • 1 sm Onion
  • 1 tsp Italian seasoning
  • 1 tsp granulated garlic
  • 2 tsp Rotisserie seasoning
  • 2 tbsp Olive Oil (Affiliate Link)
  • Salt and pepper

Instructions

  1. Cut the vegetables to bite size pieces and add to a bowl. Add 1 TBSP of Olive Oil (Affiliate Link) and toss with the Italian Seasoning.
  2. Preheat the oven to 425 degrees.
  3. Add parchment paper (Affiliate Link) to each baking sheet (Affiliate Link) to help keep them clean when cooking.
  4. Season the chicken thigh with rotisserie seasoning and add the chicken thighs and seasoned vegetables to the baking sheets (Affiliate Link). Spread it out evenly.
  5. Place in the oven and roast until cooked, about 30 - 40 minutes.
  6. Let sit for a few minutes, and add to a serving bowl.
