Description
Easy one-dish dinner idea with chicken breast, cannellini beans, and chopped escarole. Great for healthy weeknight meals for the entire family.
Ingredients
1 tsp Garlic minced
1 tbsp of olive oil (Affiliate Link)
1 lb of chicken breast cubed
1 can of Cannellini beans - rinsed
2 tsp of Italian seasoning
15 oz can of diced tomatoes
1 bag of cleaned Escarole - chopped
Salt and pepper to taste
Instructions
First, rinse the cannellini beans and set aside. Cut up the chicken breast into cubes. I used cooking scissors to cut the chicken breast (boneless). Open the tomato can and the bag of escarole and set aside. Measure out Italian seasoning and set aside.
Add 1 tbsp of olive oil (Affiliate Link) and 1 tsp garlic to the warm, non-stick skillet and heat for 3 minutes.
Add the cut chicken pieces and brown both sides for 10 minutes.
Add cannellini beans and 1 tsp Italian Seasoning. Heat for 5 minutes and stir. Do not let it burn. You can lower the temperature to medium.
Add diced tomatoes to the skillet and 1 tsp more Italian Seasoning. Stir in, cover, and cook for another 10 minutes.
Then add the cleaned and cooked escarole to the top of the skillet, cover, and cook until wilted—about 5 minutes. Then, stir into the dish—season with salt and pepper to taste.
