Ingredients

    • 6 cups Rice Chex Cereal gluten-free

    • 4 cups Corn Chex Cereal gluten-free

    • 2 cups unsweetened coconut flakes

    • 3/4 cup to 1 cup of dried cranberries

    • 1 1/4 cups sliced almonds

    • 1 cup granulated sugar

    • 1 cup light corn syrup

    • 3/4 cup DF butter alternative - used Earth Balance Vegan Vegetable Oil Spread Buttery Sticks


Instructions

Mix the Rice Chex cereal, Corn Chex cereal, coconut flakes, dried cranberries, and sliced almonds in a large bowl.

Melt the dairy-free butter alternative in a small saucepan at medium to high heat. When melted, add the corn syrup and sugar and bring it to boil for 3 minutes - about 240 degrees Fahrenheit.

Remove from heat, add the vanilla extract (Affiliate Link), and stir in completely. Then pour the syrup over the Chex mix and toss until completely coated. Using your hands may work better so as not to break the Chex cereal.

Place the trays out and add an even amount to each tray. This recipe makes four 8-inch wide by 1-inch-high Chex mix pie pan sizes.

Cover it completely in an airtight container at room temperature, or it will become a brick.
