Ingredients

  • 1 lb chicken thighs Boneless skinless (cut into 1 inch or smaller pieces
  • 2 cups macaroni
  • 1 can black beans
  • 1 can diced tomatoes
  • 1/4 cup of red onion chopped
  • 1 cup of water (enough to cover the pasta when all ingredients are in the slow cooker (Affiliate Link))
  • 1 Tbsp chili powder (Affiliate Link)
  • 1 tsp salt
  • 1 tsp granulated garlic
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp smoked paprika

Instructions

  1. Add the chicken to the Instapot and saute until there is no pink.
  2. Add red onion and saute for 2 minutes.
  3. Add the remaining ingredients and add enough water to cover the pasta. Stir and change to the slow cooker (Affiliate Link) settings.
  4. Cook on low 4-5 hours in the slow cooker (Affiliate Link).
  5. Serve warm and enjoy.
