Description
Easy Italian Instant Pot (Affiliate Link) Chicken Recipe with Tomatoes and Rice - the rice is amazing in the pressure cooker.
Ingredients
- One and a half cup pound chicken breast boneless skinless
- One large onion, chopped
- 2 tablespoons of olive oil (Affiliate Link)
- 2 tablespoons of dried parsley
- 1 teaspoon dried basil
- 2 teaspoons of granulated garlic
- Two cans of 15.5-ounce petite diced tomatoes,
- Two cups brown rice short grain
- Salt and pepper to taste
- 4 cups of chicken broth
Instructions
- First, heat the Instant Pot (Affiliate Link) on sauté. When ready, add olive oil (Affiliate Link), then chopped onion. Cook for two minutes.
- Add chicken breasts, add the granulated garlic, basil, parsley, and salt and pepper and cook for an additional three minutes.
- Pour in two cans of crushed tomatoes. Add the rest of the ingredients - brown rice short grain, parsley, basil, granulated, garlic, salt, and pepper.
- Press the pressurize button on the Instant Pot (Affiliate Link), turn it to high, and sealed for 25 minutes. After the Instant Pot (Affiliate Link) decompresses, pull the chicken out, shred it, and return it to the Instant Pot (Affiliate Link). Then, mix well. Serve warm.
Notes
Be sure not to mix the ingredients when adding them to the instant pot (Affiliate Link) before pressurizing the recipe.
