You can make a delicious weeknight dinner recipe in the morning and enjoy for dinner tonight. This Mediterranean Chicken Thighs and potato dinner is perfect for the entire family.
Ingredients
1 Tbsp Extra Virgin Olive Oil (affiliate)
1 lb of boneless skinless chicken thighs
4 cloves of roasted garlic
1 large onion chopped
2 red bell peppers chopped
1 lb red potatoes cubbed into 1 inch pieces
1/2 cup of chicken broth (affiliate)
1 tsp of dried oregano (affiliate)
1 tsp dried thyme (affiliate)
1 tsp dried rosemary (affiliate)
1 bay leaf (affiliate)
Salt and Pepper to taste
Instructions
First, chop the onions and peppers and set aside. Then, cut up the potatoes into small 1-inch pieces. The roasted garlic was cooked earlier and stored in the refrigerator. So, I minced the cloves into pieces. And set all of these items aside.
Then, I added the olive oil (affiliate) to the skillet and added the onions and peppers, and sautéed it until they were softened, about 5 minutes on medium-high.
Meanwhile, I added the cubed red potatoes, placed them and the chicken broth (affiliate) into the slow cooker (affiliate), and started it on low.
When the peppers and onions were softened, I added them to the Slow cooker (affiliate). Then, I added the chicken thigh pieces and the herbs except for the bay leaf (affiliate). and cooked for 5 minutes, turning halfway through. When it was finished, I added the slow cooker (affiliate).
I cooked the dinner on low for 4 hours. You can cook it on Sunday and reheat it for a quick, healthy dinner on a weeknight.
