Ingredients

  • 1.5 lb of boneless whole turkey breast cut into pieces
  • 1/2 bag of baby carrots
  • 1 lb of Brussel sprouts Stem removed, cut in half, and washed
  • 3 TBSP Olive Oil (Affiliate Link)
  • 2 tsp Paprika
  • 2 tsp thyme
  • 2 tsp Granulated Garlic
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Clean off the herbs if there are any on your turkey breast, then cut using scissors into pieces. Make it about 2 inches thick. We cut it into 6 pieces. Set aside.
  3. Then, season the Brussels sprouts and the carrots in a bowl with half of the thyme, salt, pepper, paprika, and granulated garlic. Toss. Add more if need be.
  4. Then, remove the veggies and place them on a parchment-lined cookie sheet (Affiliate Link).
  5. Make sections in the veggies (6 of them) and place the turkey in those places.
  6. Add the turkey pieces to the bowl and add the rest of the seasonings ( thyme, salt, pepper, paprika, and granulated garlic).
  7. Bake for 20 minutes then turn over the turkey breast pieces and bake for another 10 minutes or until it reaches 165. Let sit for 10 minutes.
  8. Place veggies in a bowl and slice meat up into strips. Keep rest for leftovers if you want.
