Some years ago, I came across Delicata squash, and I didn't know you could eat the skin, YAY! Less prep for me, so I had to do a roasted one-pan recipe using them, right? Veggies are super good for you, and roasting them brings out the flavor and sweetness of the vegetables. Come along and make my Roasted Delicata Squash and Cherry Tomatoes Recipe tonight.
Ingredients
1 lb Delicata Squash
1 lb of Cherry Tomatoes
1 TBSP Za'atar seasoning - I used the one from Morton & Bassett, San Francisco
2 TBSP Olive Oil (affiliate)
Instructions
Preheat the oven to 425 degrees, and while waiting, start prepping the vegetables.
Cut the cherry tomatoes in half and set aside.
Prep the baking sheets (affiliate) by adding a layer of parchment paper (affiliate) to help with a quick cleanup. You will only need one baking sheet (affiliate).
Then open the delicata squash by cutting the top and bottom and cutting down the middle. Then, with a spoon, remove the seeds and trash them.
Cut the squash into 1/2 inch wide slices and then about 3-inch long pieces. Then set aside.
Lay the squash pieces and the tomatoes on the lined baking sheet (affiliate). Season with Za'atar seasoning and olive oil (affiliate). Add salt and pepper if you want, or you can add it after the vegetables are cooked.
Then, add the baking sheet (affiliate) to the preheated oven and bake for 20 minutes. Now, turn over and bake for another 10 minutes or until the delicata squash pieces are tender with a fork.
