Ingredients

  • Ingredients for Cake:
  • 2 cup flour
  • 2 cup sugar
  • 3/4 cup cocoa
  • 1 tsp salt
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 2 eggs
  • 1/2 cup cooking oil
  • 1 cup milk
  • 1 tsp vanilla
  • 1 cup COLD coffee
  • Ingredients for Icing:
  • 1 cup confection sugar
  • 1/4 cup flour
  • 1 cup milk
  • 1 cup half butter / half shortening (or all butter)
  • 1 tsp vanilla

Instructions

  1. Instructions for the cake:
  2. Make 1 cup of coffee and let cool in fridge till needed.
  3. Preheat oven to 350 degrees.
  4. Combine and sift together in a separate bowl: Flour, sugar, cocoa, salt, baking soda, baking powder.
  5. In the mixer (Affiliate Link) bowl, blend eggs, oil, milk, and vanilla. Then add dry mixture. Mix thoroughly and stir in the Cold Coffee.
  6. Pour into 24 cupcakes liners and bake for 25 minutes at 350 degrees.
  7. Instructions for Icing:
  8. Combine flour and milk by adding milk slowing and whisking the flour into the milk until smooth.
  9. Set over moderate heat and stir until thickened. Let cool completely.
  10. Combine with confectioner sugar with shortening and butter (or all butter) beat until light and fluffy.
  11. Stir in well cooled flour and milk mixture. Beat on high speed till thoroughly mixed and fluffy.
  12. Add to the top of the cupcakes.

Notes

The time doesn't include the cooling time for the flour and milk mixture or the coffee.
