Ingredients
- Ingredients for Cake:
- 2 cup flour
- 2 cup sugar
- 3/4 cup cocoa
- 1 tsp salt
- 2 tsp baking soda
- 1 tsp baking powder
- 2 eggs
- 1/2 cup cooking oil
- 1 cup milk
- 1 tsp vanilla
- 1 cup COLD coffee
Ingredients for Icing:
- 1 cup confection sugar
- 1/4 cup flour
- 1 cup milk
- 1 cup half butter/half shortening (or all butter)
- 1 tsp vanilla
Instructions
- Instructions for the cake:
- Make 1 cup of coffee and let cool in fridge till needed.
- Preheat oven to 350 degrees.
- Combine and sift together in a separate bowl: Flour, sugar, cocoa, salt, baking soda, baking powder.
- In the mixer (Affiliate Link) bowl, blend eggs, oil, milk, and vanilla. Then add dry mixture. Mix thoroughly and stir in the Cold Coffee.
- Pour into 24 cupcakes liners and bake for 25 minutes at 350 degrees.
- Instructions for Icing:
- Combine flour and milk by adding milk slowing and whisking the flour into the milk until smooth.
- Set over moderate heat and stir until thickened. Let cool completely.
- Combine with confectioner sugar with shortening and butter (or all butter) beat until light and fluffy.
- Stir in well cooled flour and milk mixture. Beat on high speed till thoroughly mixed and fluffy.
- Add to the top of the cupcakes.
Notes
The time doesn't include the cooling time for the flour and milk mixture or the coffee.
