Description

Easy Sunday Beef Roast Recipe to make for the family.


Ingredients

  • 1.5 lb of beef roast
  • 5 garlic pieces minced
  • 1/2 tbsp dried rosemary (affiliate)
  • 1 tbsp olive oil (affiliate)
  • 1 tsp dried thyme (affiliate)
  • 1/8 tsp black pepper
  • 1/4 tsp of pink salt
  • 1/2 cup of vegetable or beef broth if the pan is burning on the bottom


Instructions

  1. Put in the fridge for a few hours if you want.
  2. Cut crosses in the meat with a sharp knife all over the roast, even the bottom. See the image below for more details.
  3. Add Thyme, minced garlic, pink salt, pepper, Olive oil (affiliate), and Rosemary in a bowl and mix well. Crush the pieces if they are a little large.
  4. Then, add the herb paste to the holes created. Press a 1/2 tsp into each hole with your finger. Yes, you will be getting a little dirty here. But it really works!
  5. Put in the fridge for a few hours if you want.
  6. Get a cast-iron Dutch oven (affiliate) with a lid.
  7. Preheat oven to 375 degrees.
  8. Add 2 Tablespoons of oil and heat a cast iron Dutch oven (affiliate).
  9. Add the meat and brown each side. Brown for about one to three minutes on each side. Don’t forget the ends.
  10. Cover if it is starting to splatter.
  11. Add some vegetable or beef broth to the bottom of the Dutch Oven (affiliate) if it seems to be burning.
  12. Add a thermometer set to the desired temperature for the meet. 135° for medium-rare; 145° for medium; or 150 degrees for medium-well.
  13. Add lid and place in oven - 45 minutes or until cooked to your desired temperature.
  14. Let the meat sit for 15 minutes so it cools down.

Notes

If you wish, you can cook it and freeze half for later. To reheat the dish, you can slice the defrosted roast. Add some olive oil (affiliate) to a cast iron Dutch Oven (affiliate) and heat through. Then, add the thin slices of meat to the Dutch Oven (affiliate). Then, add the heated through slices on top of a bed of lettuce. Top with your favorite salad dressing and enjoy a delicious lunch.
