Delicious and easy to make low carb snack.
Ingredients
- 1 small cauliflower
- 1 cup carrot matchsticks
- 1 cup Mozzarella cheese
- 1 cup Pecorino Romano Cheese
- 2 Eggs
- 1 tsp Dried Parsley
- 1 tsp Dried Basil
- 1 tsp Oregano
- 1 tbsp Granulated Garlic
- Salt and Pepper
Instructions
- Preheat oven to 425 degrees. Preheat a pizza stone.
- First, pulse the cauliflower and the carrot match sticks in the food processor until it looks like rice. Microwave the cauliflower mixture for about 10 minutes. Using a cheese cloth or clean tea towel, squeeze out the mixture. It was pretty dry when I did it so there wasn't a lot to clear out.
- Then, transfer back in to a bowl and add Romano cheese, eggs, parsley, basil, oregano, garlic, salt and pepper. Mix well.
- Add parchment paper (Affiliate Link) to a flat surface. I used another pizza stone I wasn't using. Then, I sprayed it with nonstick spray. This helped the cauliflower mixture from sticking. Place the cauliflower mixture on to the parchment paper (Affiliate Link) and form into a rectangle like this.
- Then, transfer the parchment to the preheated pizza stone and cook for 15-20 minutes or until brown. The top with mozzarella cheese then cook for 5 minutes till the cheese has melted. Pull out and let sit for about 10 minutes to firm up.
- I served with warm tomato sauce (Affiliate Link).
