Description

If you are a fan of jarred or canned artichokes in water, you will love this dish. 


Ingredients

  • 1 lb of boneless skinless chicken thighs
  • 1 can of cannellini beans - rinsed
  • 2/3 cup of baby carrots cut into half-inch pieces
  • 1 small red onion - chopped
  • 1/2 cup of tomato sauce (Affiliate Link)
  • 1 - 16 oz diced tomatoes
  • 1 - 16 oz can of artichokes - chopped
  • 4 cups of chicken broth or bone broth
  • 1 tbsp dried parsley
  • 1 tsp dried basil
  • 1 tsp granulated garlic
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Cut up the carrots into 1/2-inch pieces. Then, chop the red onion and set both aside.
  2. Rinse the cannellini beans and set aside. Chop up the canned artichokes and set them aside.
  3. Add all the cut ingredients, tomato sauce (Affiliate Link), diced tomatoes, chicken thighs, and broth to the slow cooker (Affiliate Link).
  4. Add the parsley, basil, salt, and pepper and stir. Set to high and cook for 5 hours. Before serving, chop up the pieces of cooked chicken thighs and add them to the soup.
