Description
If you are a fan of jarred or canned artichokes in water, you will love this dish.
Ingredients
- 1 lb of boneless skinless chicken thighs
- 1 can of cannellini beans - rinsed
- 2/3 cup of baby carrots cut into half-inch pieces
- 1 small red onion - chopped
- 1/2 cup of tomato sauce (Affiliate Link)
- 1 - 16 oz diced tomatoes
- 1 - 16 oz can of artichokes - chopped
- 4 cups of chicken broth or bone broth
- 1 tbsp dried parsley
- 1 tsp dried basil
- 1 tsp granulated garlic
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Cut up the carrots into 1/2-inch pieces. Then, chop the red onion and set both aside.
- Rinse the cannellini beans and set aside. Chop up the canned artichokes and set them aside.
- Add all the cut ingredients, tomato sauce (Affiliate Link), diced tomatoes, chicken thighs, and broth to the slow cooker (Affiliate Link).
- Add the parsley, basil, salt, and pepper and stir. Set to high and cook for 5 hours. Before serving, chop up the pieces of cooked chicken thighs and add them to the soup.
