I’m a fan of artichokes and chicken. So, this recipe shares my love of chicken and artichoke into a soup. This chicken artichoke soup recipe uses a slow cooker (affiliate) and is easy for a weeknight dinner. This recipe makes 6 servings in the slow cooker (affiliate). Read on and try today!

Slow cookers (affiliate) are great options for making soup. This recipe uses chicken thighs boneless and skinless. I then shred the chicken after it is cooked.

Chicken Artichoke Soup Ingredients

You probably have these ingredients in the pantry (affiliate) and fridge right now.

  • 1 lb of boneless skinless chicken thighs
  • 1 can of cannellini beans - rinsed
  • ⅔ cup of baby carrots cut into half-inch pieces
  • 1 small red onion - chopped
  • ½ cup of tomato sauce (affiliate)
  • 1 - 16 oz diced tomatoes
  • 1 - 16 oz can of artichokes - chopped
  • 4 cups of chicken broth (affiliate) or bone broth
  • 1 tablespoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon granulated garlic
  • 1 teaspoon salt
  • ½ teaspoon pepper

Chicken Artichoke Soup Instructions

Follow the steps below to make this easy slow cooker (affiliate) recipe.

Chop up all the vegetables

Cut up the carrots into ½-inch pieces. Then, chop the red onion and set both aside.

add beans and artichokes to slow cooker

Rinse the cannellini beans and set aside. Chop up the canned artichokes and set them aside.

Add tomato sauce to soup

Add all the cut ingredients, tomato sauce (affiliate), diced tomatoes, chicken thighs, and broth to the slow cooker (affiliate).

Chop up the cooked chicken thighs

Add the parsley, basil, salt, and pepper and stir. Set to high and cook for 5 hours. Before serving, chop up the pieces of cooked chicken thighs and add them to the soup.

Variations

You can do a few different things with this slow cooker (affiliate) recipe.

  • Spicy - add 1 teaspoon red pepper flakes to the soup before cooking.
  • Deluxe - add parmesan cheese before serving.

Description

If you are a fan of jarred or canned artichokes in water, you will love this dish. 


Ingredients

  • 1 lb of boneless skinless chicken thighs
  • 1 can of cannellini beans - rinsed

Instructions
