Description

Add fresh raw avocado to the top if you want.


Ingredients

  • 1 lb of cooked chicken sausage sliced into 1/4 to 1/2 inch pieces
  • 1 can Cannelloni beans drained
  • 1 tbsp olive oil (Affiliate Link)
  • 1- 16 oz. of frozen spinach thawed
  • 2 garlic cloves minced
  • 1 tsp basil dried
  • 1 tsp parsley dried
  • 1/2 tsp of salt
  • 1/4 tsp of pepper

Instructions

  1. Heat the skillet. Add to the skillet olive oil (Affiliate Link), thawed spinach, 1/2 of the salt and pepper, then break up the spinach so it will cook faster—Cook for 3 minutes.
  2. Then add the cannellini beans, garlic, basil, parsley, rest of the salt and pepper to the skillet. Add the cooked sausage and stir together. Reduce heat to medium. Cover it for a few minutes to heat through for about 7 minutes.
  3. Remove lid and continue cooking for another 5 minutes or until the liquid evaporates.
  4. Let cook for a few minutes and enjoy!

Notes

Tip: If you wanted more browned chicken sausage, you could heat the chicken sausage in a separate skillet.
