GF Cranberry Coconut Oatmeal Cookies Recipe Card

Ingredients

  • 1 stick and 1/2 butter
  • 3/4 cup packed brown sugar (Affiliate Link)
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1.5 cups gluten-free flour
  • 1 tsp baking soda
  • 1 tsp cinnamon (Affiliate Link)
  • 3 cups pressed oats (regular or gluten-free flour)
  • 1 cup cranberry dried
  • 1/4 to 1/2 cup coconut dried

Instructions

  1. Preheat oven 350 degrees.
  2. In a large bowl, beat butter and sugars in the mixer (Affiliate Link) until creamy.
  3. Add eggs and vanilla and beat well.
  4. Add flour, baking soda, cinnamon (Affiliate Link) in a separate bowl and mix well.
  5. Add oats, coconut, and cranberry, mix well.
  6. Using a tablespoon and put drop of dough on an ungreased cookie sheet (Affiliate Link).
  7. Bake 8 to 10 or until light golden brown. Cool 1 minute on cookie sheet (Affiliate Link). Move to a wire rack and cool to cool completely.
