Description

Beef in a slow cooker (affiliate) is a delicious, hearty dish perfect for fall and winter. This recipe was created because I wanted to make something that would help me deal with the frigget weather we have been having.

Ingredients

1 LB cubed beef (more if you want)

1/8 cup Gluten Free Flour

1 TBSP Smoked Paprika (affiliate)

1/2 tsp salt or to taste

1/2 tsp black (affiliate) pepper

4 TBSP Olive Oil (affiliate)

1 yellow onion - chopped

3 bell peppers (red and yellow variety)

3 garlic cloves minced

1 cup of red wine - dried

One cup of chicken broth (affiliate) or beef broth

1 cup of water

1/2 TBSP of Worcestershire Sauce

1 tsp dried parsley

1 tsp of dried thyme (affiliate)

2 dried bay leaves

1 cup of baby carrots

3 smaller-sized yams

Instructions

Gather all the ingredients from the list. Measure out the olive oil (affiliate), parsley, thyme, Salt, pepper, smoked paprika (affiliate), gluten-free flour, Worcestershire sauce, water, and chicken broth (affiliate). Set aside. Start with the bell peppers - remove seeds, chop into pieces. Add the bell peppers to the bottom of the slow cooker (affiliate).

Get the baby carrots and measure out 1 cup. Slice the carrots into pieces.

Chop up the onion into pieces. Mince the garlic. Set all of them aside.

Peel and chop the yams (3). Set aside.  Place them in the slow cooker (affiliate).

I cut a piece of meat into cubes, but you can buy already-cut beef cubes.

Dredge the beef onto a plate or cutting board (affiliate), then coat it with gluten-free flour. Add salt and pepper, if you want.

In a hot Dutch oven (affiliate), add the olive oil (affiliate), carrots, and onions, and cook until the onions are transparent. Then add the garlic and cook for 2 minutes. Then, place the mixture in the slow cooker (affiliate).

Add the floured meat to the Dutch oven (affiliate), along with a little of the smoked paprika (affiliate). Add a little of the thyme and parsley as well. Brown all sides, but do not let it cook through completely; cook for about 5-10 minutes.

Add the remaining smoked paprika (affiliate) to the slow cooker (affiliate). Add the thyme and parsley to the slow cooker (affiliate). Add salt and pepper to the slow cooker (affiliate).

When the beef is browned, add 1 cup of red wine. Scrape the bottom of the Dutch oven (affiliate) to remove the browned pieces. Then let it simmer for 5 minutes, or until it thickens a bit. Then add the chicken broth (affiliate) or beef broth (1 cup) and cook for a few minutes more.

Add the beef and liquid to the slow cooker (affiliate), then add the bay leaves. Stir.

You may want to add a cup of water to the slow cooker (affiliate) if it seems too low.

Turn on the slow cooker (affiliate) and cook for 6 hours on high or 10-12 hours on low.

Enjoy
