Beef in a slow cooker is a delicious, hearty dish perfect for fall and winter. This Delicious Beef Yam Stew Recipe was created because I wanted to make something that would help me deal with the frigid weather we have been having.
To be honest, prepping all the vegetables and browning the meat is the longest part of the process. But, it is so worth it!
This recipe also reminded me of my father, who loved a good meat dinner and passed away far too early. It is dedicated to him and all my family who enjoy a homemade dinner. I hope you stop by and try it for yourself.

Instructions
Below are the steps to help you organize your Delicious Beef Yam Stew Recipe!

Gather all the ingredients from the list. Measure out the olive oil (affiliate), parsley, thyme, Salt, pepper, smoked paprika (affiliate), gluten-free flour, Worcestershire sauce, water, and chicken broth (affiliate). Set aside. Start with the bell peppers - remove seeds, chop into pieces. Add the bell peppers to the bottom of the slow cooker (affiliate).

Get the baby carrots and measure out 1 cup. Slice the carrots into pieces.

Chop up the onion into pieces. Mince the garlic. Set all of them aside.

Peel and chop the yams (3). Set aside. Place them in the slow cooker (affiliate).

Dredge the Meat!
I cut a piece of meat into cubes, but you can buy already-cut beef cubes.
Dredge the beef onto a plate or cutting board (affiliate), then coat it with gluten-free flour. Add salt and pepper, if you want.

In a hot Dutch oven (affiliate), add the olive oil (affiliate), carrots, and onions, and cook until the onions are transparent. Then add the garlic and cook for 2 minutes. Then, place the mixture in the slow cooker (affiliate).
Add the floured meat to the Dutch oven (affiliate), along with a little of the smoked paprika (affiliate). Add a little of the thyme and parsley as well. Brown all sides, but do not let it cook through completely; cook for about 5-10 minutes.

Add the remaining smoked paprika (affiliate) to the slow cooker (affiliate). Then, add the remaining thyme and parsley to the slow cooker (affiliate). Add salt and pepper to the slow cooker (affiliate).
Add the wine (optional)
When the beef is browned, add 1 cup of red wine. Scrape the bottom of the Dutch oven (affiliate) to remove the browned pieces. Then let it simmer for 5 minutes, or until it thickens a bit. Then add the chicken broth (affiliate) or beef broth (1 cup) and cook for a few minutes more.

Add the beef and liquid to the slow cooker, then add the bay leaves. Stir.
You may want to add a cup of water to the slow cooker if it seems too low.

Turn on the slow cooker and cook for 6 hours on high or 10-12 hours on low.
Enjoy!
Reveal
And here is what the beef stew recipe looks like when it is finished cooking. It is so hearty you only need a little. One bowl is great for each adult, and we had leftovers the next day. Yay!

Substitutions
This is a gluten-free and dairy-free recipe, but if you don't need to follow these dietary restrictions, you can use regular ingredients.
- Regular flour instead of gluten-free flour.
- Butter instead of olive oil (affiliate).
Variations
There are a few things I did not add, but you may want to add them to your recipe to make it unique for your family.
- Spicy: add chili pepper flakes while cooking the meat for some zing.
- Deluxe - add guacamole or some shredded cheese as a garnish when serving.
Equipment
Equipments are super easy to find. A Slow Cooker (I used a 5-quart version), a knife, a cutting board (affiliate), and a Dutch oven (affiliate).
Storage
You can freeze this recipe for 1 month or so after everything is cooked. Or it can be stored in the refrigerator for 4 days.
Top tip
Don't overcook the meat. It just needs to be a little brown, not burnt.
