Easy potato salad recipe you can make tonight. Everyone will love it.
Ingredients
- 5 lb Red potatoes
- 1/2 cup celery
- 1 cup red onion
- 1-2 cup Mayo
- 2-3 Tbsp Capers
- 3-4 Tbsp Dijon Mustard
- Salt and Pepper
- Smoked Paprika and scallions (optional for garnish)
Instructions
- Boil 5 Pounds of Potatoes -20 minutes.
- While Cooking Potatoes,
- Dice 1/2 cup Celery.
- Dice 1 cup Red Onion.
- Cool Potatoes in ice bath.
- Then Dice Potatoes into small pieces.
- Dressing: Mix together 1-2 cups of Mayo. 2-3 Tbsp Capers, 3-4 Tbsp Dijon Mustard, Salt and Pepper (to taste), and mix with the vegetables.
- Add Smoked Paprika and scallions (optional for garnish).
