Easy and Delicious Potato Salad Recipe for a Crowd

Potato Salad is a great side dish for a crowd, and this one is straightforward! I made a potato salad for a party we had for my daughter's birthday.  It was delicious, and everyone enjoyed it. I call it my "Easy and Delicious Potato Salad for a crowd."  And, a bonus to help you make the potato salad, I created a video for you.  This recipe serves 8 - 10 people.

My husband's family would make potato salad all the time. Their recipe is very similar to this one. But, I like to to add capers to mine which a lot of other cooks do as well. It gives the dish a tanginess that is perfect for a potato salad.

I also love to add dijon mustard to the recipe because it adds a unique flavor the the salad.

If you like smoked paprika, you can add it too as a garnish. If not, just use regular paprika for color.

What ingredients are in an easy Potato Salad for a Crowd recipe:

5 lb Red potatoes
½ cup celery
1 cup red onion
1-2 cup Mayo
2-3 tablespoon Capers
3-4 tablespoon Dijon Mustard
Salt and Pepper
Smoked paprika and scallions as garnish (optional)

How to make a Potato salad for a crowd?

Clean the 5 pounds bag of potatoes and add them whole to the water. Then, bring the water to boil.

After it is boiled, it will take about 20 minutes in a 5-quart saucepan. Remember, the more water you have and the more potatoes you have will adjust the amount of time it will take to cook the potatoes.

While Cooking Potatoes: Dice ½ cup Celery. Then, dice 1 cup Red Onion.

Prepare a bowl of cold water. Then, add the cooked potatoes to the ice bath.

Remove them from the water after a few minutes and cut them up into small diced pieces and add to a large bowl. Bitesize pieces will help you yield a larger amount of people.

How to make the potato salad dressing:

To make the dressing, mix 1-2 cups of mayo, 2-3 tablespoon Capers, 3-4 tablespoon Dijon Mustard, Salt, and Pepper (to taste), then and mix with the diced potatoes. Add Smoked Paprika and scallions (optional for garnish),

Ingredients

  • 5 lb Red potatoes
  • ½ cup celery
  • 1 cup red onion
  • 1-2 cup Mayo
  • 2-3 tablespoon Capers
  • 3-4 tablespoon Dijon Mustard
  • Salt and Pepper
  • Smoked Paprika and scallions (optional for garnish)

Instructions

  1. Boil 5 Pounds of Potatoes -20 minutes.
  2. While Cooking Potatoes,
  3. Dice ½ cup Celery.
  4. Dice 1 cup Red Onion.
  5. Cool Potatoes in ice bath.
  6. Then Dice Potatoes into small pieces.
  7. Dressing: Mix together 1-2 cups of Mayo. 2-3 tablespoon Capers, 3-4 tablespoon Dijon Mustard, Salt and Pepper (to taste), and mix with the vegetables.
  8. Add Smoked Paprika and scallions (optional for garnish).

    This is very similar to my recipe, including the Dijon, but I've never tried capers in potato salad. It sounds wonderful!
