Description
Delicious, easy Herbed Artichoke Chicken Thighs recipe for dinner night. It is a one pan recipe.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1 can no salt tomato diced drained
- 1 can artichokes in water drained
- 1 small onion, chopped
- 1/2 cup kalamata olives
- 1 cup reduce sodium chicken broth
- 1/4 cup dry sherry
- 2 Tbsp corn starch
- 1 Tbsp dried parsley
- 2 tsp curry powder
- 1 tsp garlic granulated
- 1 tsp dried basil
- 1 tsp dried thyme (Affiliate Link)
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Combine all above ingredients in to a slow cooker (Affiliate Link). Mix thoroughly.
- Cover and cook on low for 6-7 hours or on high 3-4 hours or until the chicken thighs do not look pink.
- Serve warm. If you don't choose to make it Keto style, feel free to add rice or a roll and serve.
