Description

Delicious, easy Herbed Artichoke Chicken Thighs recipe for dinner night. It is a one pan recipe.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 can no salt tomato diced drained
  • 1 can artichokes in water drained
  • 1 small onion, chopped
  • 1/2 cup kalamata olives
  • 1 cup reduce sodium chicken broth
  • 1/4 cup dry sherry
  • 2 Tbsp corn starch
  • 1 Tbsp dried parsley
  • 2 tsp curry powder
  • 1 tsp garlic granulated
  • 1 tsp dried basil
  • 1 tsp dried thyme (Affiliate Link)
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Combine all above ingredients in to a slow cooker (Affiliate Link). Mix thoroughly.
  2. Cover and cook on low for 6-7 hours or on high 3-4 hours or until the chicken thighs do not look pink.
  3. Serve warm. If you don't choose to make it Keto style, feel free to add rice or a roll and serve.
