Slow cooker recipes are great for the busy home cooks. They offer an opportunity to have something healthy and comforting that can cook all day. And, when you return home, this recipe also gives a delicious aroma scent throughout the home. This herbed artichoke chicken thighs dish is also Keto-friendly. It is one of my favorite go-to recipes for the slow cooker. This recipe is easy to make, and you probably have these ingredients on hand right now. Try it and let me know what you think.
Simple Slow Cooker Ingredients:
1.5 lbs boneless, skinless chicken thighs
1 can no salt tomato diced drained
1 can artichokes in water drained
1 small onion, chopped
½ cup kalamata olives
1 cup reduced sodium chicken broth
¼ cup dry sherry wine
2 tablespoon cornstarch
1 tablespoon dried parsley
2 teaspoon curry powder
1 teaspoon garlic granulated
1 teaspoon dried basil
1 teaspoon dried thyme
½ teaspoon salt
½ teaspoon pepper
Easy Slow Cooker Instructions:
Combine all above ingredients into a slow cooker. Mix thoroughly.
Cover and cook on low for 6-7 hours or on high 3-4 hours or until the chicken thighs do not look pink.
