Description

This excellent cookie recipe is for anyone doing the KETO Diet or a low-carb and now-sugar diet.


Ingredients

  • 1/2 cup butter (1 stick)
  • 1 egg
  • 3/4 cup coconut spread
  • 1 1/2 cup coconut flour
  • 3/4 cup coconut sugar
  • 1 tsp vanilla extract (Affiliate Link)
  • 1 tsp baking powder
  • 2 tsp cinnamon (Affiliate Link)
  • 3/4 cup Libby's Dark Chocolate chips minis
  • 1/4 cup coconut flakes

Instructions

  1. Preheat oven to 350 degrees.
  2. Line two cookie sheets (Affiliate Link) with a silicone liner.
  3. Mix all ingredients in the order above.
  4. Then using two tablespoon ice cream scooper, scoop out a tablespoon for each cookie.
  5. Separate about 2 inches. Twelve cookies to a cookie sheet (Affiliate Link) work nicely with your finger press down the center of the cookies. Add coconut flakes if desired.
  6. Bake for 10 minutes.
  7. Continue until the entire batter is gone.
