Description
This excellent cookie recipe is for anyone doing the KETO Diet or a low-carb and now-sugar diet.
Ingredients
- 1/2 cup butter (1 stick)
- 1 egg
- 3/4 cup coconut spread
- 1 1/2 cup coconut flour
- 3/4 cup coconut sugar
- 1 tsp vanilla extract (Affiliate Link)
- 1 tsp baking powder
- 2 tsp cinnamon (Affiliate Link)
- 3/4 cup Libby's Dark Chocolate chips minis
- 1/4 cup coconut flakes
Instructions
- Preheat oven to 350 degrees.
- Line two cookie sheets (Affiliate Link) with a silicone liner.
- Mix all ingredients in the order above.
- Then using two tablespoon ice cream scooper, scoop out a tablespoon for each cookie.
- Separate about 2 inches. Twelve cookies to a cookie sheet (Affiliate Link) work nicely with your finger press down the center of the cookies. Add coconut flakes if desired.
- Bake for 10 minutes.
- Continue until the entire batter is gone.
