Since I have been doing the Keto diet, my weight dropped to where I was a year ago just within a few weeks. My blood sugar has stabilized throughout the day which minimized my lightheadedness and I don't feel hungry for hours. It's a very satisfying way to eat. While it is a little more strict than I am used to, I find that I feel better and can handle my seasonal allergies much easier. My hubby and kids are loving it too since they get to eat high quality higher fat foods.
This week's recipe is a cookie recipe that I created to have a small sweet treat. I don't like sweets often but I found myself wanting something once a week. This recipe uses butter but it works for me. The Libby's Dark Chocolate chips minis are really good. It's made with Stevia but since the chocolate is dark and dark chocolate has a more pronounced taste, you really don't taste the Stevia. And, since they are mini morsels, a little burst of chocolate works nicely.
Keto Chocolate Chip Walnut Cookie Recipe
Simple Ingredients:
½ cup butter (1 stick)
1 egg
¾ cup coconut spread
1 ½ cup coconut flour
¾ cup coconut sugar
1 teaspoon vanilla extract (Affiliate Link)
1 teaspoon baking powder
2 teaspoon cinnamon (Affiliate Link)
¾ cup Libby's Dark Chocolate chips minis
¼ cup coconut flakes
Easy Instructions:
- Preheat oven 350 degrees.
- Line two cookie sheets (Affiliate Link) with a silicone liner.
- Mix all ingredients together in the order above.
- Then using two tablespoon ice cream scooper scoop out a tablespoon for each cookie.
- Separate about 2 inches. 12 cookies to a cookie sheet (Affiliate Link) work nicely. With your finger press down the center of the cookies. Add coconut flakes if desired.
- Bake for 10 minutes.
- Continue until the entire batter is gone.
The estimated cookie calorie count is 92 cal total. But, you can calculate it yourself. I found that the size of cookies worked nicely for me. If you want them larger, this caloric estimation will not be correct.
