I've been looking for a sweet no sugar recipe to make for this blog since I started this Keto diet. And, finally, I found it. I transformed an existing Italian Ricotta Pie recipe into a guilt-free delicious Keto Italian Ricotta Pie recipe. I used coconut flour instead of flour and coconut milk instead of cream. Partly because I didn't have any cream and I wanted to see what would happen. The result was amazing! I will be making this pie again. To be honest, it is more like a no crust cheesecake with no sugar.
No Sugar Italian Ricotta Pie Recipe
Easy Ingredients:
1 lb ricotta
1 teaspoon vanilla extract (Affiliate Link)
1 teaspoon lemon extract
¼ cup coconut flour
¼ cup coconut milk
⅔ cup monk fruit
½ - ¾ cup of mini dark chocolate chips (I used this one)
3 eggs
Quick Instructions:
- Preheat oven 350 degrees.
- Add all ingredients together and mix well.
- Grease glass 5 inches by 12 inches or larger pan for thinner pieces.
- Add the batter to the ban. If you want, add more morsels to the top for extra flavor. I did!
- Bake for 40 - 45 minutes or until the toothpick comes out clean in the center.
- Let cool.
