Description
Pancakes are super fun to make and these are low carb too!
Ingredients
- 1/2 cup coconut flour
- 1/4 tsp baking soda
- pinch of salt
- 1/2 cup coconut milk
- 2 Tbsp coconut oil
- 3 eggs
- 1-2 Tbsp monk fruit
- 1 tsp vanilla extract (Affiliate Link)
- 1/2 cup coconut flakes (shredded)
Instructions
- Add all the ingredients together and mix just until wet. Don't let it sit too long it will get super thick.
- Add a scoop to the hot buttered skillet. Then, let cook for about 3-4 minutes. Using the spatula, slowly flip the pancake. Make sure you are completely under the pancake. It will be a little wet so it may break. Cook for an additional 3 minutes.
- Top with additional shredded coconut flakes and enjoy. Add maple syrup or your favorite sugar-free brand of syrup if you want.
