KETO Coconut Pancake Recipe

KETO Coconut Pancake RecipeA great homemade pancake recipe is essential in my house but going KETO left us without a great Saturday morning breakfast ritual.  So, I created one for myself. I hope you love it too. I made this Keto coconut pancake recipe from scratch. Usually, recipes from scratch take some time. Not this one! It is super easy and delicious too. I didn't even need to add maple syrup. It was sweet enough for me. Don't take my word on it. Try this KETO coconut pancake recipe yourself.

Simple ingredients:

½ cup coconut flour
¼ teaspoon baking soda
pinch of salt
½ cup coconut milk
2 tablespoon coconut oil
3 eggs
1-2 tablespoon monk fruit
1 teaspoon vanilla extract
½ cup coconut flakes (shredded)

Easy instructions:

Add all the ingredients together and mix just until wet. Don't let it sit too long it will get super thick.

Add a scoop to the hot buttered skillet.  Then, let cook for about 3-4 minutes. Using the spatula, slowly flip the pancake. Make sure you are completely under the pancake.  It will be a little wet so it may break.  Cook for an additional 3 minutes.

Catalina Crunch Low Carb Cereal

Top with additional shredded coconut flakes and enjoy. Add maple syrup or your favorite sugar-free brand of syrup if you want.

Ingredients
