Ingredients
- 2 chicken breast (large chopped into 1-inch squares)
- 2 garlic cloves (minced)
- 2 TBSP butter
- 2 TBSP olive oil (Affiliate Link)
- 1 tsp red pepper flakes
- 1 TBSP fresh parsley chopped
- 1 juiced lemon
- 1 tsp zest of lemon
- 2 cups spinach
Instructions
- First, I cut the raw chicken into cubes. This will help cook the chicken faster and make this dish easy to make during the week.
- Next, gather all the ingredients and set aside. Then, Melt butter and olive oil (Affiliate Link) in a hot skillet but not to the point of smokey. Add garlic until aromatic.
- Then, add chicken pieces and cook on high for 5 minutes or until brown.
- Next, add Parsley, lemon zest, lemon juice, salt, and pepper (optional).
- Now, cook for 10 minutes over lower heat.
- Turn the chicken pieces over, add the spinach, and season if desired. Cook for another 10 minutes or until the chicken is finished.
