Lemon Chicken is a popular dish and great for weeknight meals! This recipe can be cooked within 40 minutes without too much effort. There are only 9 ingredients, which are probably in your pantry and refrigerator right now!

Why you should use lemon in your dinner?

Lemon gives the light meat a lovely flavor. The lemon tanginess is so refreshing in the springtime. It also gives you some vitamin C to help you make your dinner even healthier. It's perfect for a weeknight meal and takes less time to make in a jiffy. I added more butter than you need (2 tbsp). Feel free to adjust the amount or use olive oil.  It will still be delicious.

What inspired me to make this dish?

I love lemon chicken, like this one from Natasha's Kitchen, but I wanted to add more vegetables. This lemon chicken recipe contains fresh spinach and creates a more balanced meal. The lemon breakdown the bitterness of the spinach to create a full flavor and little to no aftertaste.

Ingredients for my favorite lemon chicken with spinach recipe

2 chicken breasts (large chopped into 1-inch squares)
Two garlic cloves (minced)
1-2 tablespoon butter
1-2 tablespoon olive oil
1 teaspoon red pepper flakes
1 tablespoon fresh parsley chopped
One juiced lemon
1 teaspoon zest of lemon
2 cups spinach

How to Make Lemon Chicken with Spinach Recipe?

First, I cut the raw chicken into cubes. This will help cook the chicken faster and make this dish easy to make during the week.

Next, gather all the ingredients and set aside. Then, Melt butter and olive oil in a hot skillet but not to the point of smokey. Add garlic until aromatic.

Then, add chicken pieces and cook on high for 5 minutes or until brown.

Next, add Parsley, lemon zest, lemon juice, salt, and pepper (optional).

Cut up chicken pieces in skillet

Turn the chicken pieces over, add the spinach, and season if desired. Cook for another 10 minutes or until the chicken pieces are golden brown and finished.

Tips when making this dish.

Below are some tips to help you make this dish amazing!

  1. A nonstick pan works nicely and reduces burning since you use butter.
  2. Be sure to use Olive oil and butter to reduce smokiness and burning.
  3. Store this lemon chicken recipe in the refrigerator for 2-3 days.

Variations:

There are some variations you can do with this dish.

  1. Spicy - If you want it spicier, add more red pepper flakes.
  2. More Vegetables - Add extra spinach if you want. It will reduce and can be used as a warm salad to the lemon chicken dish.
  3. Chicken Thighs - YOu can easily replace the chicken breast with chicken thighs. Just remember to cut the pieces into cubes.
  4. Green beans - add fresh or frozen defrosted green beans for extra veggies to this dish.
  5. Asian flavor - add a tablespoon or two of soy sauce to the vegetables.
  6. Rosemary - add 1-2 tablespoons of fresh rosemary for an added punch of flavor and aromatics.

What equipment do I need to make this recipe delicious?

The following equipment is needed to make this recipe delicious -- A cutting board for meat, a chef's knife, and a nonstick frying pan with a lid.
