Lemon gives the light meat a lovely flavor. The lemon tanginess is so refreshing in the springtime. It also gives you some vitamin C to help you make your dinner even healthier. It's perfect for a weeknight meal and takes less time to make in a jiffy. I added more butter than you need (2 tbsp). Feel free to adjust the amount or just use olive oil. It will still be delicious.
Lemon Chicken with a Twist
Ingredients:
2 chicken breast (large chopped into 1-inch squares)
Two garlic cloves (minced)
1-2 tablespoon butter
1-2 tablespoon olive oil
1 teaspoon red pepper flakes
1 tablespoon fresh parsley chopped
One juiced lemon
1 teaspoon zest of lemon
2 cups spinach
Instructions:
Cut the chicken into cubes.
Melt butter and olive oil in a hot skillet.
Add garlic until aromatic.
Then add chicken squares and cook on high for 5 minutes or until brown.
Add Parsley, lemon zest, lemon juice, salt and pepper (optional).
Lower heat and cover for 10 minutes. Turn the chicken over and then add the spinach and season if desired.
Cook for another 10 minutes or until the chicken is finished.
