Description
These are my favorite scrambled eggs. It takes a little bit of tomato sauce (Affiliate Link) and some pepperoni and cheese like a pizza. Enjoy!
Ingredients
- 1/2 tbsp butter
- Three large eggs
- Two tablespoons no sugar added tomato sauce (Affiliate Link) or make mine (Mom's Tomato Sauce (Affiliate Link) Recipe)
- eight pepperonis cut into 4 pie size pieces
- 2 ounces mozzarella slices cut into 4 pie size pieces
Instructions
- Add 1/2 tbsp butter to skillet and heat.
- Add 3 eggs scrambled into the skillet.
- Add 2 Tbsp prepared tomato sauce (Affiliate Link) mix with eggs and cook for 2 minutes. Continually mix it to cook the eggs.
- Add the cut-up pepperoni and mix it into the eggs.
- Add quartered mozzarella to melt on top.
- Transfer to a plate and enjoy!
