Description

These are my favorite scrambled eggs. It takes a little bit of tomato sauce (Affiliate Link) and some pepperoni and cheese like a pizza. Enjoy!


Ingredients

  • 1/2 tbsp butter
  • Three large eggs
  • Two tablespoons no sugar added tomato sauce (Affiliate Link) or make mine (Mom's Tomato Sauce (Affiliate Link) Recipe)
  • eight pepperonis cut into 4 pie size pieces
  • 2 ounces mozzarella slices cut into 4 pie size pieces

Instructions

  1. Add 1/2 tbsp butter to skillet and heat.
  2. Add 3 eggs scrambled into the skillet.
  3. Add 2 Tbsp prepared tomato sauce (Affiliate Link) mix with eggs and cook for 2 minutes. Continually mix it to cook the eggs.
  4. Add the cut-up pepperoni and mix it into the eggs.
  5. Add quartered mozzarella to melt on top.
  6. Transfer to a plate and enjoy!
