Ingredients
- 3 chicken breasts whole about 1 lb
- 2 cubed zucchinis
- 1/2 large onion chopped
- 4.5 oz can of sweet green chilis
- 16 oz. can of cannellini beans - rinse and drain
- 1 tbsp Cumin
- 1 tsp Himalayan pink salt
- 1/2 tsp black pepper
- 4 cups of chicken broth
Instructions
- No need to brown the chicken breast, place the chicken breast into the slow cooker (Affiliate Link).
- Then add the cannellini beans to the slow cooker (Affiliate Link).
- Chop the onion and add it to the slow cooker (Affiliate Link).
- Add the green chili peppers. Make sure they are chopped already. If not, you will need to chop them up before tossing them into the slow cooker (Affiliate Link).
- Add the cumin to the slow cooker (Affiliate Link). Then, add the salt and pepper.
- Now, add the broth and stir.
- Cook on low for 5 hours.
- Shred up the chicken and then add the cubed zucchini. Cook for about 1/2 hour to 1 hour until the zucchini gets nice and green. Then, turn off the slow cooker (Affiliate Link) and enjoy!
