Description
Easy slow cooker (affiliate) dish that is vegan and a little spicy.
Ingredients
- 2 tbsp of olive oil (affiliate)
- 1 red pepper chopped
- 1/2 red onion chopped
- 1/2 cup of tomato sauce (affiliate)
- 2 cups or 16 oz can of cannellini beans
- 1 lb pound of sweet potatoes - peeled and chopped
- 1/4 tsp chipotle seasoning
- 2 cups vegetable broth or vegetable stock
- 1 TBSP parsley dried
- 1 TBSP basil dried
- 2 tsp minced garlic
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- First, we need to saute the onion and peppers to soften them up. Saute for 5 minutes until tender. Add the olive oil (affiliate) to a medium heat pan (not smoking), then add the chopped onion and peppers.
- Transfer the cooked onions and peppers to the slow cooker (affiliate). Start the slow cooker (affiliate) on low.
- Now it is time to add the other ingredients. Add the chopped sweet potatoes pieces and cannellini beans from a can. Make sure you rinsed the beans before adding them.
- Now it is time to add the chipotle seasoning, vegetable broth, parsley, basil, garlic, salt, and pepper to the slow cooker (affiliate). It should almost cover all the vegetables. Stir with a wooden spoon.
- Cook the stew on low for 5-6 hours. Then, remove from heat for about 15 minutes and serve.
