Description

Easy chicken dish using a whole bird and can feel several people and guests. 


Ingredients

  • Spatchcock chicken
  • 2 tsp Chili
  • 2 tsp smoked paprika
  • 2 tsp granulated garlic
  • 2 tsp cumin
  • 2 tsp dried mustard
  • Salt and pepper
  • 4 oz butter unsalted

Instructions

  1. Add all the ingredients into a bowl and mix together to create a paste.
  2. Separate skin from meat and add butter mixture to breast and thighs. If you want more butter to dilute the rub, another 4 oz of butter or use 1/2 rub mixture.
  3. Preheat grill and clean grill.
  4. Reduce to indirect heat at about 400 degrees lay the chicken bone side down.
  5. Grill for 400 degrees for 30 minutes turn over keep it at around 400 degrees. And cook for another 30 minutes or until the internal 160 and let it rest for 10 minutes. Cover with foil.
  6. Serve with asparagus and a salad. Yum!

Notes

This rub recipe can be used on chicken thighs, chicken breast, or chicken wings. You can dilute it by adding more butter.
