Description

Easy and delicious Spinach Balls Recipe that you can enjoy at a party or as a snack or light dinner. It also is great for a side dish or an appetizer. It's a great make-ahead recipe as well.

Ingredients

  • 1.5 sticks butter (softened or melted)
  • 2 10 oz. chopped spinach
  • ½ cup onion (diced)
  • 3 eggs
  • 2 egg whites
  • 2 cups herbed seasoned stuffing We used Pepperidge Farm, Herb Seasoned Stuffing
  • ½ teaspoon garlic (granulated)
  • 1 cup Romano cheese or Parmesan Cheese
  • ½ teaspoon Salt
  • ½ teaspoon Cayenne Pepper

Instructions

First, preheat the oven to 350 degrees. This recipe will be cooked in the oven.

Then, cook spinach according to the package. Drain well. Squeeze dry. Let sit at room temperature so it will be easy to handle later.

Now, add the herbed seasoned stuffing in a food processor and turn them into bread crumbs. You can pulse a few times if it is not pulverizing enough.

Next, melt the butter in the microwave or a saucepan. This should only take a few minutes or so. Do not let it burn.

Now, add melted butter, spinach, onion, eggs, egg white, herbed seasoned stuffing mix, Romano cheese or parmesan cheese, salt, granulated garlic or garlic powder, and cayenne in a large bowl. Mix well.

Now, it is time to Form into ½ - 1-inch little spinach balls. Add to wax paper on a baking sheet (Affiliate Link). Refrigerate for about 10 minutes or until it gets firm.

When ready to bake, place on parchment paper (Affiliate Link) (Affiliate Link) on a cookie sheet (Affiliate Link) (Affiliate Link) for 30 minutes—turning the spinach balls after 15 minutes. Then, when it is golden brown, the spinach balls are done. I used two baking sheets (Affiliate Link) (Affiliate Link), so they were spread out a bit.

Let sit for a few minutes.  Serve with honey mustard dip.

Notes

Now, this is where you will have to deviate from a regular spinach balls recipe. You can make these spinach balls ahead of time. Here's how. Make the balls on a waxed paper-lined cookie sheet (Affiliate Link) and place them a few inches apart on the cookie sheet (Affiliate Link). Place in the freezer for one-half hour. Then, transfer it into a baggie and freeze it for later.

Write the oven temperature at 350 degrees Fahrenheit on the baggie and back for 30 minutes.
