Ingredients

  • 2 Potatoes
  • 1/2 Butternut squash
  • 2 Sweet Potatoes or Yams
  • 5 Carrots
  • 1 medium Onion
  • 8 Tbsp of Olive Oil (Affiliate Link)
  • 2 Tbsp Parsley (dried)
  • Salt
  • Pepper
  • 1 tsp granulated Garlic

Instructions

  1. Preheat oven to 400 degrees.
  2. Peel and cut butternut, potatoes, yams, carrots, and 1 onion.
  3. Place in a large bowl and add olive oil (Affiliate Link), parsley, salt and pepper (to taste), and granulated garlic. Mix well.
  4. Place on cookie sheet (Affiliate Link) and bake in oven 40-50 minutes. Turn them over half way through the cooking process.
