Description
Sausage soup is a perfect way to keep your dinner flavorful and all cooked in one saucepan. Using a 5 qt. cast iron saucepan for a family of four is perfect for weeknight dinners. This one is especially great for family members with gluten intolerances. As a bonus, it is also dairy-free. Yay!
Ingredients
1 TBSP olive oil (affiliate)
2 links or 1/2 LB of sweet Italian sausage - remove the casing
2 garlic cloves - minced
3/4 cup of finely chopped onion
1/2 cup of chopped carrots - I chopped baby carrots
1/2 cup of chopped celery
4 Tsp Dried Parsley
2 Tsp Dried Basil
1 15.5 oz. can of diced tomatoes
3 cups of chicken broth (affiliate) - GF DF
1/2 cup of gluten-free star pasta - I used Jovial’s gluten-free Stelline pasta.
1 tsp salt
1/2 tsp pepper
Instructions
Remove the casing of the Italian sausage and set it aside.
Chop the onion and celery and set aside.
Measure out the parsley and basil, salt, and pepper. Set aside.
Mince garlic and measure out 1 TBSP of olive oil (affiliate). Set aside.
Measure out 2-3 cups of broth (1 extra cup of broth if they need it). And, open the can of diced tomatoes and measure out 2 1/2 cups of star pasta.
In a saucepan over medium to high heat, add the olive oil (affiliate). Then add the sausage links without casings. Break it up into pieces with a wooden spoon.
Cook and keep breaking up the sausage for about 5 minutes or until lightly browned.
Then, add the garlic for a minute. Then, add the celery, onion, and carrots. Sauté for 5 more minutes.
Then add the tomatoes, parsley, basil, salt, pepper, and broth, and stir.
Bring to a boil. Reduce the heat to medium-low, place the lid partially open to allow steam to escape, then cook for 15 minutes. Stirring occasionally.
While boiling, add the gluten-free pasta and cook for 10 minutes, or according to the instructions on the box.
Stir constantly so the pasta doesn’t stick.
Serve in a bowl. This recipe makes four servings.
