Sausage soup is a perfect way to keep your dinner flavorful and all cooked in one saucepan. Using a 5-quart cast-iron saucepan for a family of four is perfect for weeknight dinners. Ingredients

1 tablespoon olive oil (affiliate)
2 links or ½ LB of sweet Italian sausage - remove the casing
2 garlic cloves - minced
¾ cup of finely chopped onion
½ cup of chopped carrots - I chopped baby carrots
½ cup of chopped celery
4 teaspoon Dried Parsley
2 teaspoon Dried Basil
1 15.5 oz. can of diced tomatoes (affiliate)
3 cups of chicken broth (affiliate) - GF DF
½ cup of gluten-free star pasta - I used Jovial's gluten-free Stelline pasta (affiliate).
1 teaspoon salt
½ teaspoon pepper

Instructions

Prep the ingredients.

Remove the casing of the Italian sausage and set it aside.

Chop the onion and celery, then set them aside.

Measure out the parsley and basil, salt, and pepper. Set aside.

Mince garlic and measure out 1 tablespoon of olive oil (affiliate). Set aside.

Measure out 2-3 cups of broth (1 extra cup of broth if they need it). And, open the can of diced tomatoes and measure out 2 ½ cups of star pasta.

Let's start cookin'!

In a saucepan over medium to high heat, add the olive oil (affiliate). Then add the sausage links without casings. Break it up into pieces with a wooden spoon.

Cook and keep breaking up the sausage for about 5 minutes or until lightly browned.

Then, add the garlic for a minute. Then, add the celery, onion, and carrots. Sauté for 5 more minutes.

Then add the tomatoes, parsley, basil, salt, pepper, and broth, and stir.

Bring to a boil. Reduce the heat to medium-low, place the lid partially open to allow steam to escape, then cook for 15 minutes. Stirring occasionally.

While boiling, add the gluten-free pasta and cook for 10 minutes, or according to the instructions on the box.

Stir constantly so the pasta doesn't stick.

Can I make this sausage soup recipe spicy?


Absolutely, you can easily add red pepper flakes to the olive oil step to spice it up. 

Can I use Turkey sausage instead of pork sausage?

Yes, you can easily swap out the pork sausage for turkey or chicken sausage. Just make sure it is NOT a cooked sausage variety. 

Can I use regular soup pasta with this recipe?

Absolutely. Make sure you can cook the pasta according to the instructions on the box. 

Do I need to add the pasta to this sausage soup recipe?

No, not at all. Just adjust the cooking to exclude the pasta cooking time.

What can I add to this sausage soup recipe to make it my own?

Spicy - add 1 tablespoon of red pepper flakes or cayenne pepper (½ tsp) or to your spice preference.
Add greens - after the pasta is cooked, turn off the burner, and then add a handful or two of fresh spinach or power greens and cover with a lid and let it wilt for 5-10 minutes.

What is the best tip for this sausage soup with pasta recipe to make it cook quickly?

The smaller you make the celery, onion, and carrots, the quicker the recipe will cook.

How long can I store this cooked sausage soup with pasta recipe in the refrigerator?

If you place it in the refrigerator, it will last 3-4 days. But it won't last that long. lol

How long can I store this cooked sausage soup recipe in the freezer?

I don't recommend freezing this recipe because the soup will stick together and turn into a blob of nothing. 

What equipment is necessary for this sausage soup recipe?

The equipment is pretty easy. I used a 5 qt cast-iron saucepan, a cutting board, a chef's knife, and a container to store the soup.

Description
