Description

This is an excellent vegetable noodle recipe for a light vegetarian dinner. This one uses a spiralizer to make beet noodles.


Ingredients

  • 2 cups half Beet Greens and half Spinach greens
  • 2 TBSP Olive Oil (Affiliate Link)
  • 2 Cloves of Garlic minced
  • 2 LB Beets
  • 4 oz Goat cheese
  • 1/4 cup of walnut pieces (chopped)
  • Tool:
  • Spiralizer (handheld Spiralizer or KitchenAid Spiralizer)

Instructions

  1. Steam the Spiralized beets until al dente about 10 minutes or so. Set aside.
  2. Add olive oil (Affiliate Link) and garlic to a hot large skillet. Heat until aromatic.
  3. Add the leafy greens and saute until wilted.
  4. Add the al dente spiralized beets to skillet. Saute a few minutes and mix well.
  5. Add goat cheese and walnuts to skillet. Cook for a few minutes.
  6. Eat warm.
