Description
This is an excellent vegetable noodle recipe for a light vegetarian dinner. This one uses a spiralizer to make beet noodles.
Ingredients
- 2 cups half Beet Greens and half Spinach greens
- 2 TBSP Olive Oil (Affiliate Link)
- 2 Cloves of Garlic minced
- 2 LB Beets
- 4 oz Goat cheese
- 1/4 cup of walnut pieces (chopped)
- Tool:
- Spiralizer (handheld Spiralizer or KitchenAid Spiralizer)
Instructions
- Steam the Spiralized beets until al dente about 10 minutes or so. Set aside.
- Add olive oil (Affiliate Link) and garlic to a hot large skillet. Heat until aromatic.
- Add the leafy greens and saute until wilted.
- Add the al dente spiralized beets to skillet. Saute a few minutes and mix well.
- Add goat cheese and walnuts to skillet. Cook for a few minutes.
- Eat warm.
