Spiralized Beet Noodles With Goat Cheese And Walnuts Recipe Card

Description

This is an excellent vegetable noodle recipe for a light vegetarian dinner. This one uses a spiralizer to make beet noodles.


Ingredients

  • 2 cups half Beet Greens and half Spinach greens
  • 2 TBSP Olive Oil (affiliate)
  • 2 Cloves of Garlic minced
  • 2 LB Beets
  • 4 oz Goat cheese
  • 1/4 cup of walnut pieces (chopped)
  • Tool:
  • Spiralizer (handheld Spiralizer or KitchenAid Spiralizer)


Instructions

Before beginning, spiralize the beets using a handheld spiralizer or a spiralizer attachment. It's ok if the noodles are not long after spiralizing.

Steam the Spiralized beets until al dente about 10 minutes or so. Set aside.

Add olive oil (affiliate) and garlic to a hot large (affiliate) skillet. Heat until aromatic.

Add the leafy greens and saute until wilted.

Add the al dente spiralized beets to the skillet. Sauté for a few minutes and mix well.

Add goat cheese and walnuts to the skillet. Cook for a few minutes.

Eat warm.
