I received an Instant Pot (Affiliate Link)(R) recently to replace a few of my electronic appliances like my rice cooker, yogurt maker, and my smaller slow cooker (Affiliate Link) saving lots of space in my kitchen cabinets.
This post is my first recipe I am sharing cooked in the Instant Pot (Affiliate Link). I enjoy dishes that mix pasta with a sauce and this is another one of those recipes. What I like about this recipe is that I can saute the chicken thighs right in the Instant Pot (Affiliate Link)(R) and I don't have to dirty yet another pan. Yes!
Please learn from my mistake monitor the cooking time. It may cook quicker than you think. And, make sure you adjust the water accordingly. There are several sizes of Instant Pot (Affiliate Link)(R) so make sure you cover the macaroni so they cook properly.
Slow Cooker Chicken Chili Mac Recipe enjoyed by the Entire Family
Ingredients:
1 lb chicken thighs Boneless skinless (cut into 1 inch or smaller pieces
2 cups macaroni
1 can black beans
1 can diced tomatoes
¼ cup of red onion chopped
1 cup of water (enough to cover the pasta when all ingredients are in the slow cooker (Affiliate Link))
1 tablespoon chili powder (Affiliate Link)
1 teaspoon salt
1 teaspoon granulated garlic
½ teaspoon cumin
½ teaspoon oregano
¼ teaspoon smoked paprika
Instructions:
- Add the chicken to the Instapot and saute until there is no pink.
- Add red onion and saute for 2 minutes.
- Add the remaining ingredients and add enough water to cover the pasta. Stir and change to the slow cooker (Affiliate Link) settings.
- Cook on low 4-5 hours in the slow cooker (Affiliate Link).
- Serve warm and enjoy.
