Chili is one of our go-to weeknight meals. So much so that we loved to make it throughout the year. Visit our other chili recipes here. It's great comfort food and super easy to make. This Zucchini White Chili Recipe is one of my favorite recipes. I made it recently and want to share it with you.

You can add a variety of different ground meat or non-meat options. Beef, turkey, vegetarian, you name it, I have tried it.
The original white turkey chili recipe is here. To make it a little different, I decided to add vegetables since the original one did not have any. It made a wonderful one-pot meal that only took 30-45 minutes to cook. Read on and try it for yourself.
What ingredients are in a zucchini white chili recipe?
1 LB ground Turkey
1 cups chopped onion
½ cup chili peppers canned
1 - 14.5 oz can of Cannelloni beans
4 cups chicken broth (low sodium)
1 tablespoon cumin
1 teaspoon Salt
Two pieces of minced garlic
1 tablespoon Olive Oil (Affiliate Link)
2 tablespoon flour for thickening (gluten-free or all-purpose)
Two zucchini chopped into cubes
Toppings:
Shredded Mexican cheese
Salsa (homemade or store-bought)
Tortilla chips
Not too many ingredients, right? You probably have most of these items in your pantry (Affiliate Link).
How to make this delicious Zucchini White Chili Recipe?
Add garlic to olive oil (Affiliate Link) heat for a minute to a dutch oven (Affiliate Link) or deep large saucepan. Be sure the temperature is lower before adding the green chili. It will make a mess.
Then, add the can of green chili slowly to the saucepan for a few minutes or until heated through.
Now, it's time for the other ingredients. add ground turkey, onions, and garlic and brown. Break up the meat and stir.
Add the rest of the ingredients (cannelloni beans, chicken broth, cumin, salt, pepper(if you want) to the saucepan and stir. Cook for 10 minutes.
Then, add the zucchini and stir in for another 10 minutes.
Add the flour, stir into the chili, and cook for 5 minutes or until the broth is thicker.
Remove from heat and serve with Tortilla chips, salsa, and shredded cheese.
