This week's recipe (Grilled Asian Chicken Thighs Recipe) is a really simple marinade for those weeknight meals. It cooks in 20 minutes, and you can give your kids and significant other a lovely and healthy meal without dirtying the kitchen too much.
Let me tell you, boneless chicken thighs are a time saver during the week! I love to use boneless skinless chicken thighs during the week because it cooks quickly and is delicious.

I added it to my garden lettuce and made grilled zucchini wedges with olive oil (Affiliate Link) and garlic. The longer this chicken marinates, the better it is. This marinade will also work with chicken breast or bone-in chicken. And, with a side of whole-grain rice, it is a balanced meal.
Grilled Asian Chicken Thighs Recipe Ingredients:
1 teaspoon minced onion
3 tablespoon Gluten Free Soy Sauce (low sodium)
3 tablespoon Dark Brown Sugar (Affiliate Link)
1 tablespoon Granulated Garlic
1 teaspoon Ground Ginger
2 tablespoon Olive Oil (Affiliate Link)
8 pieces of boneless skinless chicken thighs
Grilled Asian Chicken Thighs Recipe Instructions:
Add all the above ingredients in a bowl and mix well. Marinate covered for at least 1 hour up to 8 hours.
Add to hot grill for 10 minutes on each side. It will take about 20 minutes to cook.
You can add the zucchini too to the grill if you want. Make sure the cuts of zucchini are at least ½ inch or thicker. The thicker they are, the longer it will take to cook.
After removing from the grill, serve with salad and grilled zucchini.

Notes
If you want to grill the zucchini, be sure to cut the pieces into ½ inch or thicker. Cooking time is about 10 minutes or less. Turn them over half way through cooking time. The thicker the pieces the longer it will take to cook.
