Whether you make a quesadilla bar during weeknights for a quick meal or during a sporting event, like the Super Bowl, a quesadilla bar is a great way to eat an easy, quick, and healthy meal. This past weekend, I prepared a quesadilla bar for my family. We love quesadillas. We have them in our homes all the time. Since the Super Bowl was coming up, I thought this would be a time to do this meal. Check out how we made this quesadilla bar and see how you can make your very own customized version. We love our weekly quesadilla bar. It usually features all the leftovers we had for the week in small, manageable amounts to make it more enticing.
Ingredients to make this Quesadilla Bar
Here are the items I included in my Quesadilla bar:
6-inch tortillas (whole wheat, gluten-free, regular)
½ - 1 cup Monterey Jack shredded cheese (fine shreds)
½ cup Salsa (Mild, medium, or spicy, your choice)
2 tbsp. Scallions (minced)
1 - 2 cups of cooked chicken (finely chopped)
½ cup of Refried Black Beans
½ teaspoon jalapeños
1 small can of chopped chili peppers (mild)
½ cup sautéed yellow onions (optional)
3 tbsp. barbecue sauce (optional)
Dipping sauce:
½ cup guacamole
½ cup Salsa (Mild, medium, or spicy, your choice)
1 tbsp. light sour cream
Note: If you use refried black beans, spread them on first.
Instructions:
First, I gathered the basic ingredients. I cut the cooked chicken into small cubes. Then, I minced the scallions. Finely chop the onions and set aside. Each one of these items should be placed in their own bowl so people can pick and choose what they want on their quesadilla.
Next, the guacamole was premade, but if you want to make it yourself, check out my best guacamole recipe. Add some premade salsa to a bowl. Pick the version you want: mild, medium, or spicy.
The Chili peppers are mild, but you can buy a canned spicy version. Also, you can get jalapeños diced already, sliced, or whole, depending on how much work you want to do to prepare.
Then, add some premade refried beans to a bowl for people to get if they want it.
Then, place the quesadillas on a microwave plate so people can assemble them.
Now for the dairy. Pull out the sour cream container. And the Monterey Jack shredded cheese (fine shreds) and place in a bowl.
Now it's time to assemble.
Now add the refried beans to the quesadilla. and either fold it in half or add another quesadilla on top.
Each person picked their own combination of fillings.
Now it's time to heat it up!
There are two ways to heat up the quesadilla.
Microwave
Place the assembled quesadilla on a plate. Then microwave it for 1 ½ minutes or until the cheese melts (if they used cheese). This method will not make it toasted.
Pan Fried
We use a nonstick pan. You can either add a little vegetable oil or you do not need to. It's up to you.
Place the bottom layer on the pan, then assemble the quesadilla right in the pan. Then, folding it in half or adding another quesadilla to the top works well. This process takes a little longer.
Heat it for 2-5 minutes with a spatula, flipping it over so it will be warm and toasted on each side. My husband and I like our quesadillas toasted, so we use a nonstick pan. The kids like to heat their quesadillas in the microwave.
My husband took his quesadilla a step further. He added barbecue sauce, mixed it with the chicken and sautéed onions, and created a barbecue quesadilla. Here is his quesadilla filling.
Reveal
Here is what the quesadilla looked like after cooking. After heating my quesadilla through, I made a dipping sauce to go along with the quesadilla. To make the dipping sauce, first, add guacamole, then salsa, then a small amount of light sour cream. It's delicious with the quesadilla. That is pretty much it! It's fun and easy for the kids to do, too.
