Roasted Green Beans and Tomatoes Recipe

Roasted Green Beans & Tomatoes recipe

Green beans and tomatoes are the best!  It is one of the staple side dishes when I was growing up and in our house in recent years. The kids love them! They are great for a vegetarian dish and also wonderful as a side dish. I changed this one a bit. I decided to roast it with aged balsamic vinegar. Aged balsamic vinegar is a sweetened vinegar that is also thicker than regular vinegar. I found a few on Amazon (affiliate) if you want to try them. What is in this Roasted Green Beans and Tomatoes Recipe?

The ingredients are fairly easy to find except for the aged balsamic vinegar.

1 lb green beans cut into 2-3 inch pieces
5 plum tomatoes cut into small pieces
½ red onion sliced and cut in half
2 tablespoon Olive Oil (Affiliate Link)
2 tablespoon Aged Balsamic Vinegar - Good quality
1 teaspoon Granulated garlic
½ teaspoon red pepper flakes
Salt and Pepper to taste

Now that you have all the ingredients together, let's begin cooking!

How to make Roasted Green Beans and Tomatoes?

Preheat oven to 400 degrees.

Cut green beans end and cut into 2-3 inch pieces for easy cooking and put aside.

Cut tomatoes into small pieces and put them aside.

Cut onion sliced and cut in half.

Toss all the ingredients together well in a bowl.

Add parchment paper (Affiliate Link) to a cookie sheet (Affiliate Link).

Pour the mixed ingredients into the parchment paper (Affiliate Link) and bake for 20-30 minutes or until green beans are cooked.

That's it!  Serve with a side of seasoned couscous or quinoa.  You can also add Parmesan cheese to it.

What's great about aged balsamic vinegar is that it is thick and you do not need a lot. It is also sweet. Delicious to drizzle on veggies.

Ingredients

    This sounds great! I've come to believe that there isn't a vegetable that isn't even better when you roast it with olive oil and garlic. My husband's not fond of green beans, but I bet he would like this!
