Green beans and tomatoes are the best! It is one of the staples side dishes when I was growing up. I changed this one a bit. I decided to roast it with aged balsamic vinegar. My whole family loved it. This is how I made roasted green beans and tomatoes.
Roasted Green Beans and Tomatoes Recipe
Ingredients
1 lb green beans cut into 2-3 inch pieces
4 - 5 plum tomatoes cut into small pieces
½ red onion sliced and cut in half
2 TBSP Olive Oil
2 TBSP Aged Balsamic Vinegar - Good quality
1 tsp Granulated garlic
½ tsp red pepper flakes
Salt and Pepper to taste
Instructions
Preheat oven to 400 degrees.
Cut green beans end and cut into 2-3 inch pieces for easy cooking and put aside.
Cut tomatoes into small pieces and put aside.
Cut onion sliced and cut in half.
Toss all the ingredient together well in a bowl.
Add a parchment paper to a cookie sheet.
Pour the mixed ingredients into the parchment paper and bake for 20-30 minutes or until green beans are cooked.
That's it! Serve with a side of seasoned couscous or quinoa. You can also add Parmesan cheese to it.

What's great about aged balsamic vinegar is that it is thick and you do not need a lot. It is also sweet. Delicious to drizzle on veggies.

This sounds great! I've come to believe that there isn't a vegetable that isn't even better when you roast it with olive oil and garlic. My husband's not fond of green beans, but I bet he would like this!
