Broccoli Rabe Meatballs recipe

I love freezing meatballs this time of year. They are a great weeknight quick meal.  You can make meatball sandwiches or just add them with your favorite pasta and tomato sauce.  Here is a twist on meatballs.  I added broccoli rabe to it.  It's frozen broccoli rabe thawed out.  You can replace this with spinach if you want.  By using the mix, it made the meatballs lighter and didn't sit in my stomach.   Here is how I made the broccoli rabe meatballs recipe.

Ingredients:

1.5 lb pork, veal, beef ground mixture
5 tablespoon Romano Cheese
1 - 10 oz frozen Broccoli Rabe (thawed, cooked and pressed to remove excess liquid)
⅓-1/2 cup onions finely chopped
4 tablespoon dried parsley
1-2 pieces of garlic
3 eggs scrambled
2 cups panko bread crumbs
1 teaspoon salt
¼ teaspoon pepper

Instructions:

Preheat oven to 375 degrees.

Place all the ingredients into a bowl and mix well.

Using a small ice cream scooper, scoop out some of the mix and make it into a ball. Then, place it on parchment paper cookie sheet. Repeat until you are finished making the meatballs.

Then, bake in the preheated oven at 375 degrees for 40-45 minutes. Turning the meatballs in 20 minutes.

That's it. Here is the finished product.

We ate one tray of meatballs and froze the other tray.  After the meatballs had cooled, I placed them in a bag and put them flat in the freezer for another day. Just add your favorite tomato sauce and heat through.  It works great with a bowl of pasta. =) Yum!
