Roasted Butternut Squash and Apple Recipe

Anyone will enjoy this sweet and savory Roasted Butternut Squash and Apple Recipe. It's great for Meatless Mondays or days when you need a quick side dish. I even like this recipe for a great Thanksgiving side. Let me show you how to make it. And, visit the end for tips on how to make this recipe even more delicious.

Ingredients

First, let's start with the ingredients. They are super easy to find at your nearby grocery store.

  • 1 butternut squash
  • 1 - 2 tablespoon of Olive oil (affiliate)
  • 2 red apples - this is where you can make it sweeter or more bitter - pick the apple of your choice
  • 1.5 onions (white) or purple onion (which is sweeter) or Vidalia Onion (which is sweet as well)
  • ¼ cup of maple syrup
  • 1 tablespoon or more of Apple Pie Spice (It has Cinnamon (affiliate), Nutmeg, and Allspice in it).

Instructions

First, let's start with the cutting and prepping of the vegetables.

Wash the squash, peel the skin, remove seeds, and cut the butternut squash. It should be about 1 inch or smaller. Then set it aside on a cutting board (affiliate).

Wash the apple, cut it into about 1-inch pieces, and place it next to the butternut squash cubes.

Now peel and chop the onion into 1-inch pieces or smaller. And add to the cutting board (affiliate).

On the cutting board (affiliate) should be the butternut squash, the apples, and the onions. Now add the olive oil (affiliate) drizzled over the top of the vegetables. If you have a lot of butternut squash, be sure to add more olive oil (affiliate).

Now, sprinkle the apple pie spice on the butternut squash, apple, and onion. Toss on the cutting board (affiliate).

Then, transfer to a lined baking sheet (affiliate).

Then, preheat the oven to 425 degrees and place the vegetables in the oven for 30-40 minutes, turning them at 20 minutes. When done, it should look a little brown, and the onions will be transparent.

Now, drizzle maple syrup on top of the bowl of vegetables and toss. Serve at room temperature.

And here is what the recipe looks like when it is finished cooking. It was so good. Add a little salt to enhance the sweetness of the butternut squash and apple mixture. Check out my other roasted recipe: Roasted Carrots Recipe with Beets and Butternut Squash.

Variations

You can add a variety of different things to this roasted vegetable dish to make it your own. Below are just some that would taste delicious.

Nuts: Pecans and Walnuts are my favorite for this dish.

Fruit: You can add dried cranberries for a tartness, too.

Equipment

There is very little equipment you need for this recipe: a cutting board (affiliate), a chef's knife (affiliate), and a sturdy baking sheet (affiliate).

Storage

You can store these raw ingredients, cut up in the fridge for a few hours, then throw them in a pan.

After cooking, it will need to be refrigerated for 3 days and then tossed. However, it will not last that many days. It was devoured in my house.

Top tip

Be sure the butternut squash is not wet when you are cutting it.

FAQ

What else should I add to this Roasted Butternut and Apple Recipe?

You can add a variety of nuts (like walnuts and pecans) and dried cranberries.

Roasted Delicata Squash and Cherry Tomatoes Recipe Card

Description

Some years ago, I came across Delicata squash, and I didn't know you could eat the skin, YAY! Less prep for me, so I had to do a roasted one-pan recipe using them, right? Veggies are super good for you, and roasting them brings out the flavor and sweetness of the vegetables. Come along and make my Roasted Delicata Squash and Cherry Tomatoes Recipe tonight.


Ingredients

1 lb Delicata Squash

1 lb of Cherry Tomatoes

1 TBSP Za'atar seasoning - I used the one from Morton & Bassett, San Francisco

2 TBSP Olive Oil (affiliate)


Instructions

Preheat the oven to 425 degrees, and while waiting, start prepping the vegetables.

Cut the cherry tomatoes in half and set aside.

Prep the baking sheets (affiliate) by adding a layer of parchment paper (affiliate) to help with a quick cleanup. You will only need one baking sheet (affiliate).

Then open the delicata squash by cutting the top and bottom and cutting down the middle. Then, with a spoon, remove the seeds and trash them.

Cut the squash into ½ inch wide slices and then about 3-inch long pieces. Then set aside.

Lay the squash pieces and the tomatoes on the lined baking sheet (affiliate). Season with Za'atar seasoning and olive oil (affiliate). Add salt and pepper if you want, or you can add it after the vegetables are cooked.

Then, add the preheated oven and bake in the oven for 20 minutes. Now, turn over and bake for another 10 minutes or until the delicata squash pieces are tender with a fork.
