Broccoli Rabe Meatballs recipe

I love freezing meatballs this time of year. They are a great weeknight quick meal.  You can make meatball sandwiches or just add them with your favorite pasta and tomato sauce (Affiliate Link).  Here is a twist on meatballs.  I added broccoli rabe to it.  It's frozen broccoli rabe thawed out.  You can replace this with spinach if you want.  By using the mix, it made the meatballs lighter and didn't sit in my stomach.   Here is how I made the broccoli rabe meatballs recipe.

Broccoli rabe meatballs recipe Ingredients

1.5 lb pork, veal, beef ground mixture
5 tablespoon Romano Cheese
1 - 10 oz frozen Broccoli Rabe (thawed, cooked and pressed to remove excess liquid)
⅓-1/2 cup onions finely chopped
4 tablespoon dried parsley
1-2 pieces of garlic
3 eggs scrambled
2 cups panko bread crumbs
1 teaspoon salt
¼ teaspoon pepper

Broccoli rabe meatballs recipe Instruction

Preheat oven to 375 degrees.

Place all the ingredients into a bowl and mix well.

Using a small ice cream scooper, scoop out some of the mix and make it into a ball. Then, place it on parchment paper (Affiliate Link) cookie sheet (Affiliate Link). Repeat until you are finished making the meatballs.

Then, bake in the preheated oven at 375 degrees for 40-45 minutes. Turning the meatballs in 20 minutes.

How to use these Broccoli Rabe Meatballs?

You can use these unique meatballs like you normally do. Some options are to add them to tomato sauces or an Alfredo cream sauce. You can also add them to a salad without any sauce altogether.

Freezer-Friendly Option

We ate one tray of meatballs and froze the other. After the meatballs had cooled, I put them in a bag and put them flat in the freezer for another day. Just add your favorite tomato sauce (Affiliate Link) and heat through. It works great with a bowl of pasta. =) Yum!

Description

Easy Broccoli Rabe Meatballs Recipe for freezing for later or eating it now with tomato sauce (Affiliate Link). 


Ingredients

  • 1.5 lb pork, veal, beef ground mixture
