Making cookies from home is just so much fun. You not only get to enjoy the cookies, but you also have a house filled with the aromatics of baking. Yum! This cookie recipe is called Cranberry Coconut Oatmeal Cookies recipe. It's a favorite in our home. This is a gluten-free recipe but can easily be converted into a regular cookie recipe.

GF Cranberry Coconut Oatmeal Cookies Ingredients
One stick and ½ of butter
¾ cup packed brown sugar (Affiliate Link)
½ cup sugar
Two eggs
tsp vanilla (gluten-free)
1.5 cups gluten-free flour
1 teaspoon baking soda
1 teaspoon cinnamon (Affiliate Link)
3 cups pressed oats (regular or gluten-free flour)
1 cup cranberry dried
¼ to ½ cup coconut dried
GF Cranberry Coconut Oatmeal Cookies Instructions
Preheat oven to 350 degrees. Then, add butter and sugar to the mixer (Affiliate Link) bowl. Beat butter and sugars in the mixer (Affiliate Link) until creamy, like in the image below.
Now, add eggs and vanilla and beat well.
Then, add flour, baking soda, cinnamon (Affiliate Link) in a separate bowl and mix well.
Add oats, coconut, and cranberry, and mix well.
Using a tablespoon, put a drop of dough on an ungreased cookie sheet (Affiliate Link). Bake 8 to 10 or until light golden brown. Cool, 1 minute on cookie sheet (Affiliate Link). Move to a wire rack and cool to cool completely.
