Cauliflower Carrot Mock Breadsticks Recipe
Here are the ingredients I used:
1 small cauliflower
1 cup carrot matchsticks
1 cup Mozzarella cheese
¾ - 1 cup Pecorino Romano Cheese
2 Eggs
1 teaspoon Dried Parsley
1 teaspoon Dried Basil
1 teaspoon Oregano
1 tablespoon Granulated Garlic
Salt and Pepper
Cauliflower Carrot Mock Breadsticks Recipe Instructions
Preheat oven to 425 degrees. Preheat a pizza stone.
First, pulse the cauliflower and the carrot matchsticks in the food processor until it looks like rice. Microwave the cauliflower mixture for about 10 minutes. Using a cheesecloth or clean tea towel, squeeze out the mix. It was pretty dry when I did it, so there wasn't a lot to clear out.
Then, transfer back into a bowl and add Romano cheese, eggs, parsley, basil, oregano, garlic, salt, and pepper. Mix well.
Add parchment paper (Affiliate Link) to a flat surface. I used another pizza stone I wasn't using. Then, I sprayed it with nonstick spray. This step helped the cauliflower mixture from sticking. Place the cauliflower mixture onto the parchment paper (Affiliate Link) and form into a rectangle like this. Then, transfer the parchment to the preheated pizza stone and cook for 15-20 minutes or until brown.
The top with mozzarella cheese then cook for 5 minutes till the cheese has melted.
Pull out and let sit for about 10 minutes to firm up. I served it with warm tomato sauce (Affiliate Link).

These sound yummy but I'm not a big fan of Romano cheese. Could i substitute Parmesan or something else?

Wow these sound really delicious, though certainly a fair amount of work. But I hadn't thought of using vegetables in this way at all. Usually just eat carrot sticks raw or steamed in the usual way. Thanks for the recipe.
