I found this product recently by Ocean Spray(R), it's called, "Craisins Dried Cranberries Blueberry Juice Infused" and just had to do something with it. So, I decided to make oatmeal cookies. They really bring to life the oatmeal cookies. I added chocolate chips to them as well just because I didn't know if I would be able to taste the infused cranberries. But, boy was I wrong. I could totally taste the infused blueberry flavor! If you can find them, I would recommend just using them without the chocolate chips.
Ingredients:
1 stick and ½ butter
¾ cup packed brown sugar
½ cup sugar
2 eggs
1 teaspoon vanilla
1.5 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
3 cups pressed oats (regular)
1 cup semisweet chocolate morsels (optional)
¾ cup Blueberry flavored cranberries (your favorite flavor) like Ocean Spray(R) Craisins Dried Cranberries Blueberry Juice Infused
Instructions:
-
Preheat oven 350 degrees.
-
In a large bowl, beat butter and sugars until creamy.
-
Add eggs and vanilla and beat well.
-
Add flour, baking soda, pumpkin pie spice in a separate bowl and mix well.
-
Add oats, chocolate chips and blueberry infused cranberries, mix well.
-
Using a tablespoon or a small ice cream scooper, put a drop of dough on an ungreased cookie sheet.
-
Bake 8 to 10 or until light golden brown. Cool, 1 minute on cookie sheet. Move to a wire rack and cool to cool completely.
Here are the finished cookies. Don't they look yummy?
